Biscotti at Four Seasons Hotel Bangkok has long been our city's go-to spot for fine Italian cuisine.  Carrying on that tradition, the new Italian Chef Daniele Cason brings his experience from Rome, London, and Egypt.  He plans to carry on creating Biscotti's blend of traditional dishes but hopes to incorporate a slightly more modern flair.  Cason's new style can be seen in his plating techniques which playfully showcases the natural colors of produce.  His dishes also include surprising ingredients, like the Lobster Risotto with Fresh Tomato, Basil, and Vanilla—which uses aromatic vanilla beans to enrich the risotto.

Pictured above are some of Daniele Cason's new dishes: Italian Caprese, Tomato Cuore di bue and Mozarella with Fresh Basil, Smoked Lobster Risotto with Fresh Tomato, Basil, and Vanilla, and Basil Tempura Cod with Cherry Tomato Coulis and Glazed Vegetables.

Also new to Biscotti is South African native John McCosh, who has taken on the helm of restaurant manager.  McCosh has worked for the Four Seasons Hotels and Resorts in Hampshire, Canary Wharf, Jackson Hole, and Boston.  Since coming to Bangkok, he has incorporated new ideas for the Italian restaurant, including a tribute to the The Giro d'Italia (The Italian Cycling Grand Tour.)  Special dishes were created to correspond to the regions where the cyclists passed.
