Does esterification turn you on? What about liquid nitrogen or emersions? No, we’re not talking about anything kinky… unless food science and molecular gastronomy is your idea of a fetish!   Gaggan holds the unique distinction of being the only restaurant in Bangkok where science meets Indian food and gives birth to an exciting new concept called Progressive Indian Cuisine.

It’s a dining experience that stimulates all the senses, one that is paradoxically familiar and unfamiliar at the same time. Dining at Gaggan is an event, and they generally have a tasting menu of about 8-10 courses starting around THB 1,600++ per person.  The menu changes daily based on what fresh proteins and produce chef/owner Gaggan Anand sources locally that day. 

All guests are treated to the Yogurt Egg amuse-bouche--served on a chilled spoon and your eyes tell you it is a poached quail egg.  As you slide it into your mouth, the morsel explodes in a perfectly balanced burst of mild and creamy spiced yogurt that is both sensual and shockingly delightful. Each course that follows is visually stunning, flavorful, playful, mysterious, thought provoking, and cohesive while maintaining quintessential Indian flavors.

Those “in the know” will tell you the best seat in the house at Gaggan is the chef’s table, a private dining room with a front and center view through a large glass window into the kitchen where you can witness chef and his talented staff create culinary magic. It’s a highly coveted spot and you need to book a few weeks in advance, but it's well worth the wait.
