Forget rooftop views.  Dining underground is totally in. 


From first sight, Medici at Hotel Muse looks different.  The iron arches, wooden floors, and stacked barrels look like they’ve been around for decades.  There’s an ample sized bar and an open kitchen from which you can hear your entrees sizzle and the Tuscan chef (Francesco Lenzi) barking orders.


There’s also smoke—scented with peppers and onions and thick fatty prosciutto.  It’s atmospheric.  


What you should start with is the Tagliere di salumi mistifor, exclusively imported cold cuts and cheeses from Tuscany available in servings for 2-4 (THB 790++) or 6-8 (THB 1400++) people.  The wooden boards are generous, with slices of Parma ham, salami, and aged parmesan. Our second recommendation?  The smooth Risotto al Taleggio e Speck in salsa di tartufo, slow cooked Vialone Nano Rice with Taleggio Cheese & Smoked Ham in Truffle Sauce (THB 560++.)


It’s probably a good idea for us to tell you that there’s nothing here that shouts healthy.  No foams or liquid nitrogen emulsions, just good ingredients and the intent of using them to their full potential, the way your momma would have made things… if she were Italian.  


For mains, try the Caccuicco alla Livornese, Braised Fresh Fish with a Variety of Seafood in Tomato Sauce and Crispy Bread (THB 520++), or the Guancia di vitello cotta a bassa, temperatura con pure di zucca, capperie acciughe, 32 hrs. sous vide Australian veal cheek, pumpkin puree, capers and anchovy (THB 680++.)


Drink a dirty martini, or for something light to cut the grease—amaretto sour.


Dessert?  That’s up to you and how full you are.  The same question goes for weather or not to take the stairs or elevator back up.
