Michelin Star Chef Nicolas Isnard at Brio

Chef Nicolas Isnard of the Michelin Star L'Auberge de la Charme restaurant in France, comes to Bangkok for the first time this year.  The Chef will make his Bangkok debut at to Brio, famed Italian restaurant of Bangkok Marriott Resort and Spa in A Tuscan and French Affair, melding his signature dishes with Brio's roots in Tuscan cuisine.


The menu includes Foie Gras de Canarad en Compression, Geleé de Pommes Verte, Vin D'éspices (Compressed Duck Foie Gras from Canard, with Green Apples and Spiced Wine), a dish that the chef says incorporates the finest French Foie Gras, with his home town's specialty of apples.  Other dishes like Low Temperature Cooked Snow Fish and Escargot Raviolis are also available.


Chef Isnard's Degustation Menu includes a very special Soupe á l'oignon version contemporaine aux truffles, a Contemporary take on the traditional French Onion Soup, using truffle foam, and Onion Ice Cream.  Another highlight of the menu is the Chef's Hommard á la Plancha, Houmous, Emulsion Citron-Gingembre, Kumquat (Lobster Served with Hummus, Lemon-ginger Emulsion, and Kumquat marmalade.)


Chef Nicolas Isnard is in Bangkok from February 21st to 26th, 2011.  Brio is open for Lunch at 11:30 – 14:30 hrs, and dinner at 18:00 – 22:00 hrs.  From the 26th onwards, Brio continues to serve dishes from resident Italian Chef Antonio Facchinetti.
