Summer is the perfect time for grills and gatherings, but in Bangkok you'll want to dodge the tropical rain and look for somewhere with dependable food and atmosphere.  This month, fine dining venue Fuzio on Ekamai presents something that'll knock your ideas of the perfect steaks on its head:  Three words—Blackmore Wagyu Beef.


By using Blackmore Wagyu Beef from Jack's Creek (Australia), Fuzio guarantees that what you're eating is 100% full blood Wagyu with no cross contamination, a pedigree that can be traced back 70 years.  The result is a uniquely flavored steak, with a marble score of 9 points.  For those who want to know, marble scores in Wagyu Beef determine the fat that is interlaced into the meat which forms a marble pattern.  This higher the scoring, the better.  Although for thick steaks, a score of 7-9 is most preferable to preserve the meat to fat ratio.

But don't start getting weight conscious.  The fats in marbeling are monounsaturated, which means they help lower cholesterol levels.  Blackmore Wagyu Beef is also free of growth hormones and antibiotics.

So what does it taste like?  We tried the Blackmore Rib Eye with Wasabi Gravy, a dish that mixes elements of western and Japanese cuisine.  The steak was butter-smooth, and melts into a distinctive smoky flavor, while wasabi keeps the dish sharply balanced.  Along with the steaks, Fuzio will also serve Aurora Lamb from the midlands of Tasmania.  The 60-day grain fed lamb are processed halal and export certified.

 


Premium Meat Menu includes:

  • Grilled Tasmanian Wagyu of Lamb with Italian Fresh Herbs (THB 1,500++)
  • Rosemary, Garlic and Pine nuts Crusted Rack of Tasmanian Wagyu Lamb, for 2 Persons (THB 3,600)
  • Grilled Australian Aged Black Angus Beef Fillet Mignon Wrapped with Italian Speck Ham and Goose Liver in Porcini Mushroom Sauce (THB 1,250++)
  • Australian Blackmore Rib Eye in Wasabi Gravy and Potato Wedges with Mesclun Mix and Sesame-Soya Vinaigrette, International Marbling Score of 9 points (THB 1,750 per 100g with a minimum order of 200g.
  • Side dishes can also be ordered for an additional (THB 180++) and includes Parsnip Bread Pudding and Crunchy Parsnip Topping, Creamy Polenta with Caramelized Apples, White Truffle Potato Risotto, Sautéed Spinish with Mushroom Garlic and Oil, Potato Au Gratin, and Basil Pesto Mashed Yukon Gold Potatoes.
