It’s hard to believe that Celebrity Chef Daniel Green used to be an overweight teenager.  By learning to cook for himself, Green shed the pounds and entered the lucrative world of London's modeling scene.  He later joined the culinary arena, becoming a television personality and author with a passion to teach people about healthy cooking.  


His latest challenge?  Taking on the role of Healthy Chef Consultant for all Dusit Thani Hotels worldwide.


The British/American Chef is no stranger to the Thai hotel brand, having stayed in Dusit Thani Bangkok on many previous visits.  He is admittedly inspired by Thailand and Thai cuisine, saying it was this type of food that helped him open up his pallet and lose weight.  


Daniel Green's healthy menu will be served at The Pavilion Restaurant, Dusit Thani Bangkok throughout August 2011.  Dishes will include his signature healthy breakfast of energy drink, poached egg on smoked salmon, egg white omelet, and low-fat muffin.


Other healthy food will be added to the Pavilion's menu and also Dusit Thani Bangkok's room service selection.  These include appetizers like Tuna Nicoise, Bouillabaisse Soup, and the highly recommended Butternut Squash Soup.  Mains such as Seared Scallops on Sweet Potato and Onion Reduction, Fillet Mignon with Red Wine and Pomegranate Seeds, Salsa Verde Fish, and Wasabi Tuna are also available.  And last but certainly not least, desserts which are so good, you'll forget they're healthy—low-fat crème Brule, Poached Pears, and Lemon Curd Ice Cream.


Inspiration for his food comes from all over the world, the Chef mentions how the global trend of cooking seems to be a sharing of flavors.  "It's not just French and Italian anymore," says the Daniel."You won't think that it's strange to see a green curry at a hotel in Egypt, or couscous in a London hotel…"


When asked about whether or not people will miss the greasy comfort food usually found on room service menus the Chef replied, "I think people usually expect those large portions of burgers and club sandwiches.  I do believe room service should be filling and should be served in larger portions, but it can also be healthy and good for you."


He also commented on the principal of his cooking, "I don't like it when people say 'fat is flavor', it's true that fat is an easy way to make things taste good—but there is also so much you can do.  There are so many different techniques and seasonings to really bring out the taste of ingredients."
